My Enoki Cabbage Beef Rolls have been my go-to dinner as of late. Not only are they healthy, flavorful packed with vegetables & protein, & super easy to make, but they also taste like a warm hug. Who wouldn’t love that?

These satisfying enoki cabbage beef rolls are easy, healthy, and flavor-packed with vegetables and protein. The best part is that they taste like a warm hug. Who wouldn't love that?

Ingredients:

  • leaves from 1/4 Napa cabbage
  • 1 lb thinly sliced beef
  • 1 roll enoki mushrooms (cut & separated)
  • 3 cups bok choy (stems removed)
  • 1/4 cup soy sauce
  • 1/4 cup chicken broth
  • 1/4 tsp dashi powder
  • 1 tsp rice vinegar
  • 1/2 tsp sake
  • 1/4 tsp MSG
  • 3 cloves minced garlic

Instructions:

  1. Blanch the Napa cabbage leaves for 30 seconds in boiling water.
  2. Place a piece of beef on a Napa cabbage leaf & then about 4-5 enoki mushrooms, Roll it up. Repeat for the rest.
  3. Make your sauce: Combine the soy sauce, chicken broth, dashi powder, rice vinegar, sake, & MSG.
  4. In a big pan, place your bok choy in it along with 1/4 cup of water. Cover, & steam for 5 minutes on medium/high heat.
  5. Place your enoki cabbage beef rolls in the pot, pour the sauce over them, & cover for 5 more minutes until fully cooked. Enjoy!
