Mom’s Cozy Tuscan Soup

My mom made her Tuscan soup for me and my husband last winter, and for months, it was the only soup he talked about. It was raining this past weekend, and of course he begged the question: “Can you please make soup?” I knew only one soup that would perfectly satisfy his craving: my mom’s cozy Tuscan soup…and it was everything we needed to lift our spirits on a dreary day.

Packed with spicy Italian sausage, kale, meaty mushrooms, and bathed in a rich, savory broth, this soup is the epitome of mouthwatering, hearty, and cozy.

Mom's Cozy Tuscan Soup

Ingredients:

  • olive oil
  • 1 onion, diced
  • 2 tsps salt
  • 1 tsp black pepper
  • ½ tsp red pepper flakes
  • 1 pound hot Italian sausage
  • 6 large cloves garlic, minced
  • 2 tsps Italian seasoning
  • 1 medium russet potato, peeled and diced
  • 1 (14.5 ounce) can crushed tomatoes, with juice
  • 2 (15.5 ounce) cans navy beans, drained and rinsed
  • 6 cups chicken stock
  • 7 cups of loosely packed kale
  • 1 cup sliced shiitake mushrooms
  • 1 tablespoons chopped parsley
  • juice of 1/2 lemon
  • grated parmesan, olive oil, & black pepper for garnish

Instructions:

  1. Drizzle in 2 tbsps olive oil to a large pot. Over medium/high heat, add in onion, salt, pepper, and red pepper flakes. Sauté until the onion softens (2-3 minutes).
  2. Add in the Italian sausage. Mince and cook it completely (5 to 6 minutes). Add in the garlic, & Italian seasoning, & cook for 2 more minutes.
  3. Add in the diced potato, crushed tomatoes, and navy beans. Stir to incorporate. Pour in the chicken broth
  4. Bring soup to a boil, and reduce the heat to low. Cover, & simmer the for 20 minutes.
  5. Turn the heat off, & add in the kale, shiitake mushrooms, parsley, & lemon juice. Stir to wilt the kale into & cook the mushrooms (2 minutes).
  6. Serve, & top with parmesan, black pepper, & a drizzle of olive oil.
