Homemade hotpot packed with savory vegetables, meat, & chewy noodles bathed in a rich, deeply flavorful and healing broth

Once you make hotpot at home, you'll never be able to go back to the mediocre restaurant version. This homemade hotpot is customizable to all your cozy preferences. The broth is rich, deeply flavorful, and healing. Filled with bouncy noodles, and hearty, savory meats and vegetables, this meal is the definition of heaven on earth.

Serve it with a rich, nutty, creamy shabu shabu sauce, and you’ll be loving life (& never making the trek to a hotpot restaurant again)!

Ingredients:

Hotpot Ingredients:
  • leaves from 1/4 Napa cabbage
  • 1 lb thinly sliced beef
  • 1 bundle enoki mushrooms
  • 6 shiitake mushrooms (sliced)
  • 2 bundles of mung bean vermicelli
  • 8 oz firm tofu, sliced
Shabu Shabu Dipping Sauce Ingredients:
  • 3 tbsps sesame paste
  • 3 tbsps hot water
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp hot honey
  • 2 cloves minced garlic
  • 1 tbsp minced cilantro
  • 1 tbsp chopped scallions

Instructions:

  1. Layer your Napa cabbage leaves & half of your thinly sliced beef to form 11 layers. Slice this into thirds.
  2. Mix your broth ingredients together.
  3. Add the remaining hotpot ingredients to a large pot, & pour the broth over. Cover & cook for 10 minutes on medium/high heat until the meat is fully cooked.
  4. While the hotpot is cooking, mix the shabu shabu sauce ingredients together.
  5. Serve the hotpot with the shabu shabu sauce for dipping. Enjoy!
