Pad See Ew is probably the most popular Thai noodle dish next to Pad Thai, and for good reason. This is the most flavorful, chewy bowl of noodles, & it’s surprisingly very easy to make. Pad See Ew means “stir fried soy sauce noodles” in Thai, & it’s one of my all-time favorite comfort meals. However, restaurants never seem to add enough kick to it, so today I bring to you my Spicy Pad See Ew—same restaurant flavor we all know & love but with a little kick to make it the best you’ve ever had. You’ve got to make this for your friends & family…they’ll be floored, and it will be gone in minutes—just speaking from experience. :)

Ingredients:
- 1/2 lb thinly sliced beef
- 1 tsp soy sauce
- 1 tsp oyster sauce
- 1 tbsp corn starch
- 2 tbsps soy sauce
- 1.5 tbsps dark soy sauce
- 2 tbsps oyster sauce
- 1 tbsp shaoxing wine
- 1/2 tsp chicken bouillon
- 1/2 tsp white pepper
- 2 tbsps palm sugar
- 1 tbsp fresh rice noodles
- 4 cloves minced garlic
- 2 crushed Thai chili pepppers
- 6 Chinese broccoli (gai lan)
- 2 eggs
- neutral oil
Instructions:
- Marinate your beef in the marinade ingredients.
- Combine your sauce ingredients.
- Separate your gai lan leaves and stems, and slice the stems into thinner pieces.
- On a hot, oiled wok, grill your beef until 80% cooked. Set aside.
- Add more oil to the wok, and cook your garlic, crushed Thai chili peppers, and gai lan stems for 2 minutes on medium heat. Add the gai lan leaves, and cook until wilted. Push everything to the side, & scramble 2 eggs. Then mix everything together. Set aside.
- Add more oil to the pan along with the fresh rice noodles. Pour the sauce over the noodles, and saute until the noodles have absorbed the sauce. Add the grilled beef and broccoli mixture in, and mix everything together. Enjoy!
Notes:
- You can find fresh noodles at most Chinese grocery stores, but if you don’t have one near you, try out my homemade rice noodle recipe instead!
- To reheat, cover with a wet paper towel, and microwave!
