Cheesy Chorizo Meatball Sliders with Spicy Vodka Sauce

There’s only one way to eat meatball sliders, and it’s with my cheesy chorizo meatballs bathed in vodka sauce and tucked between pillowy-soft dinner rolls. These are cheesy, saucy, and every bit as mouthwatering as they look. I served these to my family the other day, and we had to stop ourselves from each individually eating the whole entire pan!

Cheesy Chorizo Meatball Sliders with Spicy Vodka Sauce

Ingredients:
- 1 lb chorizo
- 2 thick sliced of white bread
- 2 cups milk
- 1 diced yellow onion
- 2 cloves minced garlic
- 1 tbsp minced parsley
- ¼ tsp red pepper flakes
- ½ tsp salt
- ½ tsp black pepper
- 1 egg
- 15 dinner rolls
- 9 slices of provolone cheese
- 4 tbsps butter
- 1 diced shallot
- 4 cloves minced garlic
- 1 tsp salt
- ½ tsp black pepper
- 2 tsps red pepper flakes
- 2 tsps thyme
- ½ cup tomato paste
- ½ cup chopped roasted red peppers
- 1 ⅓ cup vodka
- 1 cup heavy cream
- ½ cup shredded parm
- ½ cup melted butter
- 2 cloves minced garlic
- 1 tbsp minced parsley
- 1 tsp oregano
- ¼ tsp red pepper flakes
Instructions:
- Make your meatballs: Soak your bread in the milk for 5 minutes. Then remove the bread, & tear it into small pieces. Mix the bread pieces, chorizo, onion, garlic, parsley, red pepper flakes, black pepper, & egg together. Form the mixture into meatballs on a parchment paper lined baking sheet, & bake them at 375 F for 25 minutes.
- Make your sauce: In a pot over medium heat, add the butter, shallot, garlic, salt, pepper, red pepper flakes, & thyme. Sauté until fragrant.
- Add in the roasted red peppers and tomato paste to the sauce. Cook for 2 minutes, & then deglaze with vodka. Cook until the vodka has reduced by half, & then take an immersion blender, & blend the sauce together until smooth.
- Pour the blended sauce back into the pot, and over low heat, pour in the heavy cream, & then add in the shredded parmesan. Stir for about 5 minutes until the sauce thickens slightly.
- Add the cooked meatballs into the sauce, & mix.
- Line the bottom halves of your dinner rolls in a rectangular pan. Spread some of the vodka sauce onto each roll along with a meatball.
- Lay the provolone cheese slices on top of the meatballs, & then sandwich the tops of the dinner rolls on the meatballs.
- Mix your garlic butter ingredients together, & brush the garlic butter on top of the sliders. Cover the pan with foil, & bake at 350 F for 15 minutes and then for an additional 5 minutes uncovered.
