When I was in NYC last week, I had the most tender, juicy, mouthwatering Crying Tiger steak at a Thai restaurant (a must-try at Twin Tails in Columbus Circle if you ever visit). It was served with an addictive dipping sauce that was perfectly sweet, tangy, spicy, and nutty. I couldn’t stop dreaming about it and knew I had to recreate it immediately once I got home. I’ve perfected the recipe, and I’m proud to say that it’s way better than the restaurant version. So here it is. I hope you enjoy!

Thai Crying Tiger Steak
Tender, juicy Thai Crying Tiger Steak served with a savory, spicy dipping sauce packed with bold, irresistible flavor
Ingredients:
- 1 ribeye steak
- 2 cloves minced garlic
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp oyster sauce
- 1 tbsp sugar
- 1 tsp black pepper
- 1 tbsp avocado oil
- 1.5 tbsps glutinous rice
- 2 tbsps palm sugar (crushed)
- 3 tbsps fish sauce
- 2 tbsps tamarind sauce
- juice of 2 limes
- 1 crushed thai chili pepper
- 1 diced shallot
- ¼ cup minced cilantro
Instructions:
- Marinate steak in the marinade ingredients for 15-20 minutes.
- While the steak is marinating, toast the rice in a dry pan until golden brown (about 3-4 minutes). Then use a mortar and pestle to grind the toasted rice into a fine powder.
- Mix together the rice powder with the rest of the dipping sauce ingredients.
- Heat an oiled cast iron pan over medium/high heat, and grill the marinated steaks for 2 minutes per side. Remove the steaks from the pan once they reach 120-125 F for medium rare.
- Let the steak rest for 10 minutes before cutting into it. Serve with rice & the dipping sauce!"
