A comforting Korean tofu seafood stew packed with silky-soft tofu and a rich, healing broth that tastes just like your favorite Korean restaurant!
Ingredients:
- -neutral oil
- -11 oz extra soft tofu (drained)
- -2 oz pork belly or shoulder
- -2 shiitake mushrooms (finely diced)
- -¾ cup seafood assortment
- -3 mussels
- -½ zucchini (diced)
- -¼ chopped onion
- -1 chopped scallion
- -2-3 tbsps gochugaru
- -1 tbsp sesame oil
- -2 cloves minced garlic
- -1 tbsp fish sauce
- -1 tbsp oyster sauce
- -1 tsp soy sauce
- -¼ tsp salt
- -¼ tsp pepper
- -1 cup water
- -1 seafood stock coin
- -¼ tsp MSG
Toppings:
- -scallions
- -egg
- -gochugaru
Instructions:
- Add gochugaru & 2 tbsps neutral oil to pot over medium heat. Stir until it forms a paste.
- Stir in onion, garlic, scallions, pork belly, mushrooms, fish sauce, oyster sauce, and soy sauce.
- Pour in water, & add seafood stock coins. Bring to a boil for 3-4 minutes.
- Drop seafood assortment, mussels, and zucchini in. Boil until mussels open (about 3 minutes).
- Add MSG, salt, & pepper.
- Mix in your tofu, breaking it up. Let it boil for 3 minutes. Drizzle in sesame oil. Add an egg, scallions, & gochugaru. Serve with rice.
