My Beef & Chorizo Enchiladas have earned a top spot among my post popular recipes, and for good reason. This is my ideal cozy weeknight dinner. It comes together in a pinch, and it only requires a couple of steps. I actually inherited this recipe from my mom and tinkered with it to make it even better. Fun fact, this is the first meal I made for my husband when we started dating, and we’re married now (which I believe is a testament to the power of this glorious dish). My enchilada recipe is also my go-to hosting dish because everyone, and I mean everyone loves it. My husband continually asks me to make this for him on repeat, and it’s become a favorite among my friends and family. It’s a meal people ask me to make over and over again, and I’m excited for it to become a weekly staple in your house as well!

Beef & Chorizo Enchiladas

Ingredients:

  • 1 cup shredded white cheddar
  • 3 cups Mexican cheese
  • 3 cloves minced garlic
  • 1/2 red onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeño, minced
  • 1 lb ground beef
  • 1 lb chorizo sausage
  • 1/4 cup taco seasoning
  • 2.5 cups enchilada sauce
  • 10 Trader Joe's habanero lime wraps

Instructions:

  1. To a pan, sauté garlic, onion, the bell pepper, & jalapeño for 4 minutes on medium heat. Then add the beef and chorizo, & cook until the meat is browned.
  2. Season your meat mixture with the taco seasoning.Cover the bottom of a 9x13 inch pan with 1/2 cup of enchilada sauce.
  3. Take a habanero lime wrap and add a handful of cheese and a spoon of the meat mixture into it. Roll it up, & place it in the pan. Repeat for the rest.
  4. Cover the enchiladas with the remaining sauce & then with the remaining cheese.
  5. Cover the pan with foil, and bake at 350 F for 30 minutes. Serve with guac, pico de gallo, & Greek yogurt (or sour cream)!
