Today, I bring you my Dan Dan Noodles, made with chewy, bouncy noodles that are bathed in a rich, creamy chili oil pork sauce--it’s a Chinese household favorite for a reason!

Ingredients:

Sesame Paste Ingredients:
  • 1 3/4 cups toasted sesame seeds
  • 2/3 cup olive oil
  • 2 tbsps sesame oil
  • 1/2 tsp salt
Pork Marinade:
  • 1 lb ground pork
  • 1 tbsp shaoxing wine
  • 2 tbsps soy sauce
  • 1/2 tbsp dark soy sauce
  • 1/2 tsp white pepper
  • 1/2 tsp chicken bouillon
  • 1/2 tsp Chinese five spice powder
  • 2 cloves minced garlic
  • 1 tbsp minced ginger
Noodles, Sauce & Toppings:
  • 330 grams Chinese wheat noodles
  • 1/4 cup chili oil
  • 1/4 cup soy sauce
  • 3 tbsps sesame paste
  • 2 tsps ground sichuan peppercorns
  • 1/2 tsp Chinese 5 spice
  • 1/2 tsp sugar
  • 1/4 tsp MSG
  • 4 cloves minced garlic
  • ¼ cup pasta water
  • 1/4 cup crushed peanuts
  • 1/4 cup chopped scallions

Instructions:

  1. 1. Make your sesame paste: In a food processor, pulse the sesame seeds until they’re finely broken up. Continue to pulse, & slowly drizzle in the olive oil, sesame oil, and salt.
  2. 2. Marinate the pork: Mix all of your pork marinade ingredients together, and transfer them to an oiled pan. Cook on medium high until the pork is fully cooked.
  3. 4. Boil your noodles according to the package instructions. Save 1/4 cup of the pasta water. Then strain your noodles, & rinse them under cold water in the strainer to prevent them from sticking together.
  4. 5. Make your sauce: Mix together the chili oil, soy sauce, sesame paste, ground Sichuan peppercorns, Chinese 5 spice, sugar, MSG, garlic, & pasta water together along with 1/4 cup of the pasta water you saved.
  5. 6. Add the noodles & meat to your sauce. Mix together, & garnish with crushed peanuts & scallions.
