Ingredients:
- 5 eggs
- ¼ cup + 1 tbsp sugar
- 16 oz mascarpone
- 34 lady fingers
- ½ cup espresso powder
- 2 cups room temperature water
- 1 cup Marsala wine
- ¼ cup cocoa powder
Instructions:
- Separate the yolks and whites of the eggs into 2 separate bowls. Pour ¼ cup sugar into the yolks, & beat them on high until they’re thick, creamy, & have a pale yellow color (about 5 minutes).
- Mix the marscapone into the yolks, & beat until creamy (about 2 minutes).
- Add 1 tbsp sugar into the egg whites, & beat until they form stiff peaks. Fold the egg whites into the marscapone mixture, ensuring to maintain the volume from the egg whites.
- Mix the espresso powder & water together in a bowl, & then pour in the Marsala wine.
- Dunk the ladyfingers into the espresso mixture, & line them on a rectangular dish. Spread half of the marscapone mixture on top of the lady fingers. Repeat this process once more, adding another layer of dunked lady fingers & the remaining marscapone mixture to achieve 4 layers.
- Refrigerate the tiramisu for at least 4 hours or overnight. Dust with cocoa powder, & enjoy!
