The Best Chocolate Chip Cookies in the World

Ingredients:
- 1 1/3 cup (170 g) all-purpose flour
- ½ tsp baking powder
- ½ tsp baking soda
- 1/2 tsp salt
- 1/2 cup (113 grams) melted Kerrygold butter
- 1/2 cup (100 g) dark brown sugar
- 1/3 cup (70 g) white sugar
- 1 tsp vanilla bean paste
- ¼ tsp espresso powder
- 1 large egg
- 1 Tony’s Chocolonely Dark Chocolate Bar
- 1/2 cup chopped pecans
- 12 mini squares of cut up dark chocolate
- flaky sea salt
Instructions:
- Melt your butter. Once it's cooled, whisk your sugars into your butter. Add your egg & vanilla. Whisk again.
- Combine your flour, baking soda, baking powder, salt, & espresso powder.
- Combine your wet & dry ingredients. Chop up your Tony's Chocolonely bar, & fold the chocolate & pecans into your dough.
- Scoop cookie dough, and refrigerate covered for 1 hour.
- Bake cookies at 375 F in the middle rack for 8 minutes. Top cookies with more flaky salt as soon as you take them out of the oven. Cool for them for 15 minutes before enjoying.
