My No-Bake Biscoff Cheesecake Cups are 3 layers of absolute heaven: a crunchy Biscoff cookie crust, a creamy Biscoff cheesecake filling, and a generous spread of Biscoff cookie butter. Biscoff is tucked into every single element of this recipe, which is certainly my kind of dessert. And…it doesn't even require you to turn on an oven, so you don’t need any baking skills. What’s not to love?

Forget plain cheesecake–this the creamiest, dreamiest dessert ever. It has all the textures of crunchy, creamy, and luxuriously thick from the cookie butter topping. They make the best little dessert portions, so you can have a single serving of Biscoff cheesecake every day for dessert!

Ingredients:

Biscoff Crust:
  • 30 Biscoff cookies
  • 2 tbsps salted butter
  • pinch of salt
Biscoff Cheesecake Filling:
  • 4 cups heavy cream
  • 16 oz cream cheese
  • 1 cup powdered sugar
  • 1 cup biscoff spread
  • 2 tsps vanilla bean paste
  • pinch of salt
Toppings:
  • 1 cup Biscoff spread
  • 8 Biscoff cookies
  • ½ cup crushed Biscoff cookies

Instructions:

  1. Make your crust: Crush up your biscoff cookies, and then mix in the butter & salt.
  2. Make your cheesecake filling: Whip up your heavy cream until it forms stiff peaks. In a separate bowl, cream together the cream cheese, powdered sugar, biscoff spread, vanilla, and salt. Then fold the heavy cream into the cream cheese mixture. Transfer this into a piping bag or a Ziploc bag with a corner snipped.
  3. Assemble: Grab 10 small serving cups (about 8-10 oz), and add about 2 tbsps of the crust mixture to the bottom of each one. Pipe an even amount of the cheesecake filling into each bowl. Then microwave your biscoff spread for 30 seconds to melt it slightly, and pour a thin layer of it onto each cheesecake cup.
  4. Chill the cheesecake cups for 4 hours.
  5. Decorate each cheesecake cup with a perimeter of crushed biscoff cookies, and then insert a biscoff cookie into each cup.
