Thai pineapple fried rice is one of my all-time favorite restaurant dishes. It's an incredibly easy dinner, and the combination of fresh coconut rice, caramelized pineapples, grilled shrimp, vegetables, and crunchy cashews make for a tropical flavor explosion that will keep you going back for more.

Ingredients:

Coconut Rice:
  • 1 cup uncooked jasmine rice
  • ½ cup coconut milk
  • ½ cup water
Seasoning:
  • 1 ¼ tsp curry powder
  • 1 tsp sugar
  • ½ tsp white pepper
  • ½ tsp salt
Sauce
  • 1 tbsp soy sauce
  • 2 tsps fish sauce
  • 1 ½ tsp shrimp paste bean oil
Shrimp Marinade
  • 2 cups uncooked large shrimp
  • ½ tsp salt
  • ¼ tsp white pepper
  • 1 tsp paprika
  • 1 tbsp neutral oil
Fried Rice:
  • 2 beaten eggs
  • 1 diced yellow onion
  • 1 cup diced pineapple
  • 2 diced Roma tomatoes
  • 3 chopped scallions
  • ¾ cup cashews

Instructions:

  1. Make your coconut rice: Combine and cook your coconut rice ingredients in a rice cooker.
  2. Marinate your shrimp in the shrimp marinade ingredients.
  3. Combine your seasoning ingredients.
  4. Mix your sauce ingredients together.
  5. In a hot, oiled wok, cook your shrimp for 2 minutes on each side on medium/high heat. Set the shrimp aside once fully cooked.
  6. Add more oil to your wok, and scramble your eggs. Once the eggs are halfway cooked, add in your coconut rice, onion, seasoning, and sauce. Sauté for 2 minutes. Then add in your pineapple, and shrimp. Sauté for 5 minutes.
