Butternut Squash Apple Salad with Goat Cheese & Maple Balsamic Dressing

Ingredients:

Butternut Squash:
  • 3 cups cubed butternut squash
  • 2 tbsps olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsps cinnamon
Chicken:
  • 3 chicken thighs
  • 2 tbsps olive oil
  • 1.5 tbsps Lawry’s seasoning salt
Maple Balsamic Dressing:
  • 1 tbsp Dijon mustard
  • 1 clove minced garlic
  • 2 tbsps balsamic vinegar
  • 1 tbsp apple cider vinegar
  • 1 tbsp maple syrup
  • 2 tsps soy sauce
  • 1/4 cup olive oil
  • ¼ tsp salt
  • ¼ tsp pepper
Salad:
  • 11 oz spring mix
  • 1 diced honeycrisp apple
  • ½ cup goat cheese
  • ⅓ cup sliced almonds
  • drizzle of balsamic glaze

Instructions:

  1. Season the butternut squash with the seasoning ingredients, & bake it on a sheet pan at 425 F for 30 minutes, flipping halfway.
  2. Season the chicken thighs with the olive oil & Lawry’s seasoning salt. Bake the chicken at 375 F for 20 minutes, & let it rest for 5 minutes before cubing it up.
  3. Mix your dressing ingredients together.
  4. Assemble your salad: lay your spring mix on a platter, & add the roasted butternut squash, apples, chicken, goat cheese, almonds, and dressing. Drizzle balsamic glaze overtop.
